Roasted Beets and Bacon

Prep Time 20 minutes
Cook Time 45 minutes
Servings 4 servings

Instructions
 

  • Preheat oven to 400F.
  • Prepare baking sheet with parchment paper.
  • Wash beets under cool water.
  • Remove stalks and ends of the beets, and peel.
  • Slice beets thinly, and lay on baking sheet in a single layer.
  • Roughly chop bacon. Sprinkle it on top of the beets.
  • Bake for 15 minutes.
  • Remove pan from oven and toss to coat in the bacon fat. Return pan to the oven and bake for another 15 minutes. Toss a second time and bake until the beets and bacon start getting crispy, 10-15 minutes.
  • Enjoy warm as a side, or use part of a salad with your favorite greens!
