It’s time to make some muffins! Not just any muffins, but Cheese Bacon Muffins! We love this recipe for many reasons. First, it is easy to make. You could even make it with your kids! The most difficult part is getting the batter into the muffin cups, but even that can still be fun! Also, it doesn’t take up your whole afternoon to make. Which is perfect since we all have busy schedules! This recipe is great for breakfast or as an after school snack, and especially as a side dish! Most importantly, these muffins are tasty! As soon as everyone smells the bacon, your family will come running.

Muffins are a fun way to shake up your meals. We’ve all had chocolate and blueberry and corn  muffins, it’s about time we add some bacon to the mix!

Cheese Bacon Muffins

Ingredients
  

  • 2 cups flour
  • 1/2 cup sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1 cup shredded cheddar cheese
  • 1 cup plain yogurt
  • 2 eggs beaten
  • 1/4 cup butter melted
  • 1/2 cup Garrett Valley Farms Bacon Bits

Instructions
 

  • Preheat oven to 400°F. Grease 12 muffin cups.
  • Mix dry ingredients together - flour, sugar, baking powder, salt, and baking soda - together in a large mixing bowl. Then stir cheddar cheese into dry mixture.
  • Add yogurt, eggs, and butter into the flour mixture. Stir until combined.
  • Finally add in bacon bits and mix.
  • Spoon the batter into the prepared muffin cups.
  • Bake in the oven for 15-20 minutes, until the edges start browning.
